And now for two sushi you might easily confuse at the sushi train as they roll by: salmon and rainbow trout. Here, though, you can see the difference, as the salmon is presented as nigiri-zushi (rice topped with fish) and the rainbow trout is presented in the pressed style known as oshi-zushi, giving it a flatter, tighter appearance.

Toyama is famous for its pressed masuzushi, wrapped up tight in bamboo leaves, with many souvenir shops selling them in flat packs like the one below.
